Day Two (Thursday)


Okay, so it is day two and I was rushing to eat so that I could meet my friend to walk. I got creative and made a protein smoothie with a slice of sprouted bread


Once again not prepared for what I was going to eat so I made a salad with spicy hummus, feta and toasted pecans. I added some beef stew from the freezer and walla!



Didn't really want dinner and thought of going to Panda, but I held fast and sauteed this chicken breast along with a green beans, carrots and onions. It made for a pretty filling and satisfying meal. Done in under 15 minutes.
